Roasted Veggie Medly

Combine an assortmet of veggies that could include:
  • mushrooms
  • tomatoes
  • onions
  • zuchinni
  • asparagus
  • bell peppers
(think of it like kabobs on a cookie sheet)

  • toss veggies with olive oil, salt, pepper.
  • Roast at 400 degrees for 20 minutes.
  • Turn up to high heat for last five minutes
